No matter whether you get the UDM Pro or SE, get a switch (at least Pro series, Pro Max or Enterprise if planning to add WiFi 6E or 7 APs in the future). The RJ45 LAN ports on the UDM Pro/SE share a 1Gbps backplane.

I'd recommend not using separate SSIDs based on frequency. It's generally not a good idea. You only need one combined 2.4 and 5GHz SSID for all your personal devices, if you activate MAC authorization. You can bring your devices into specific vlans with this configuration.
